At this month’s Wednesday Wine tasting, we will be hosting Charles Bonnafont of Domaine Cinq Peyres and Florence Delaby of Domaine du Courtchou: two friends and mentors that embody my passion for natural wines. Charles is the president of the association Terres de Gaillac: a biologist, oenologist and farmer with a 360° vision of the vine. He combines biodynamic principles with traditional farming wisdom to craft fresh, balanced wines that reveal all the energy of his terroir. Florence is a member of the same collective and crafts lively wines under the Nature & Progrés label. Together they will take us on a vinous voyage into their Gaillacois galaxy. Prepare for cosmic sparkles, astral energies and full-bodied supernovas. Luminous notes of white flowers and star fruit and mineral-fresh meteor showers and, on the dark side of the moon, seas of ripe berries dusted with spice that draw you into hidden depths, leaving nothing but a trail of fine tannins behind you…OK, OK! That’s a bit over the top, but I am a bit over-excited. I can’t wait to introduce these two winemakers to you!
