About the winemaker
La Carbonelle is a 4 hectares estate in Restinclières in the Hérault region. It was founded in 2005 by writer and winemaker Catherine Bernard, who has farmed biodynamically since the beginning. Her son, Nicolas Allain, joined her in the vineyard and the winery in 2017 after training in Burgundy, Trentino and Provence. They both believe the future of the estate depends on an agroecological approach, with a diversification of practices and crops. After the devastating heatwave of 2019, they began to set aside plots to plant trees alongside vines. This project took off in February 2024 in the historic Carbonelle plot, where 50 ares of olive trees have been planted. Over the last four years, the plot around the cellar has become a testing ground. Here, the vines grow among woodland trees, fruit trees and medicinal plants. In 2020, the winery became home to a distillery - Lana Labermeier's “La Theriaque Spiritueux”. She produces eaux-de-vie and vermouths in this new ecosystem using a copper still, taking the whole cycle of the plant and its transformation into consideration.
The vines at the La Carbonelle and Les Chênes are aged between 20 and 80 years old. Their natural environment is protected. The soils are not tilled. Catherine and Nicolas have planted local trees and shrubs to promote biodiversity. Each year represents a new dialogue with the grapes, which is interpreted, then translated by their vinification choices and the aging process. All the plots are certified organic. The vines are treated with goat’s milk and biodynamic preparations to prevent disease. The grapes are harvested by hand in small crates. Fermentation is carries out spontaneously by indigenous yeasts and the wines are bottled in the cellar, without fining or filtration or any added sulfites.
